Chez Pascal

Chez Pascal
Providence, RI
Markets: Pawtucket - Wintertime

Starting Monday, February 16, 2009, Chez Pascal will be offering The Market Menu in addition to our regular menu on Mondays. Inspired by the fantastic overwhelming success of the Saturday Winter Farmers' Market in Pawtucket, we thought it would be exciting to create menu items based solely on what we can get directly from the Market and/or the farmers themselves. This is not to say that we don't source locally as a rule anyway, but we are bound by supply, seasons and basic products to make sustaining an entire menu based on this notion difficult. The items on The Market Menu will only be offered on Mondays for this reason with a few exceptions sourced elsewhere... salt, pepper, spices, flour, stocks & olive oil. As the season changes and more items become available, the menu will expand. And who knows, with a little luck and ingenuity The Market Menu may evolve into the only menu on Mondays. Now that is progress. Kicking this menu off in Winter certainly provides its own challenges, but we do love a good, fun, healthy challenge! The unpredictability of nature will keep us patient and humble. Supplying only when it is ready, and when it is gone it is gone. Please come out and see what our good earth is making. STARTING MONDAY, FEBRUARY 16TH An example of what you might find on our upcoming MARKET MENU: * Roasted Matunuck Oyster Farms Littleneck Clams with Aquidneck Farms Kielbasa and House Pickled Hungarian Wax Peppers * Assiette of Aquidneck Farms Grass Fed Beef Burgers on House Made Onion and Sea Salt Brioche Buns, Narragansett Creamery Divine Providence Cow's Milk Cheese & Crispy Rhode Island Potato 'Strings' * Pan Seared Black Bird Farm New York Strip Steak with Roasted Rhode Island Potato & Four Town Farm Cape White Turnip Terrine * Narragansett Creamery Ricotta Cheesecake with Aquidneck Island Apiaries' Honey Poached Hill Orchard Matsu Apples

Florence & Manton Farm is run by Adam Graffunder in Olneyville, just up the hill from Atlantic Mills. The farm is on the south side of Mount Pleasant hill, and grows on a somewhat sandy fill. Natural compost and mineral soil amendments are used to build soil habitat and fertility. No artificial or concentrated chemical amendments, herbicides or pesticides are used at Florence & Manton Farm. What weed and pest control is done is with simple tools. Tools, produce, and some compost materials are transported to and from Florence & Manton Farm by bicycle. This makes possible the net positive impact the farm has on the environment and community at many scales. Bicycle transportation also makes profit possible for a farm of this size (about a tenth of an acre). Important crops consist of heat-loving fruits like eggplant and peppers to soak up the southern sun, compact low-maintenance crops like cooking greens pay the bills every week, and a diverse assortment of vegetables, leaves, herbs, flowers and roots workshop future crops, capture niche markets, and support systemic diversity. Adam also ferments local vegetables, including some of his own, under the F&M Fermented brand. These wild lacto-fermented products can be purchased at the Fertile Underground Grocery.

Hopkins Farm

Hopkins Farm
North Scituate, RI
Markets: Pawtucket - Wintertime, Providence - Neutaconkanut

Hopkins Southdowns
North Scituate, RI
Markets: Pawtucket - Wintertime

Hopkins Southdowns was established in 1980 by Donald and Debra Hopkins, both of whom had been extremely active participants in the raising of purebred sheep as youth. Donnie and Debbie built their flock based on structural soundness, breed character, natural thickness and adequate size. With this in mind they selected superior genetics from Snow White, University of Connecticut, Deacon Acres, Kenyon Farms, Kwisnek and Cole. Since the foundation was laid, few females have been added to flock, however they have purchased several rams from FR Farms, MB Genetics, Splendorview, and B&B Howard to compliment the ewes they currently have. The farm has been in the Hopkins family for over 100 years. They started raising sheep in 1970, and today five family members live on the farm, and three work with the sheep. Eight of their forty acres are in pasture, on which they keep 40 brood ewes and produce over 50 lambs a year. The ewes are pastured during the summer and participate in rotational grazing, alternating across their four pastures, to keep down the parasites and to help out the grass growth. No hormones are fed. In the warmer months the most popular sheep cuts are chops or ribs, for grilling, whereas in the winter, when stews are more appropriate, shanks are called for. The popularity of lamb as a meat source has climbed recently thanks to exotic, extraterritorial cooking methods. Now, aside from raising their own sheep, Deborah’s full-time job is registering sheep, which she began doing in 1998. She is also the Treasurer of the RI Sheep Co-op and is involved in Rhody Warm blankets. The Hopkins family has been involved in the sheep industry locally and nationally for over 40 years. It has been and continues to be a great experience and lifestyle for all of them.

Sidewalk Ends Farm
Providence, RI
Markets: Providence - Armory

Founded in the spring of 2011, Sidewalk Ends Farm is a 5000 square foot urban farm on Harrison Street in Providence’s Armory Park neighborhood. Once a vacant lot, the farm at Harrison St. has become a hub of food production, beauty, and community education. Beginning in 2013, our third season, we will expand our operation by cultivating an additional third of an acre at Red Planet Vegetables in Johnston, RI. This increase in production will enable us to better serve the demand for healthy local produce in our neighborhood. We—Fay, Laura, and Tess—work together to grow delicious chemical-free vegetables. We sell our produce at the Armory Farmers Market (a mixed-income market around the corner from the farm) and to our neighbors through a CSA. We sell to local restaurants as a member of the Little City Growers Co-op, an 8-year-old urban and peri-urban direct marketing cooperative. We rely on our bikes and bike trailers to do most of the hauling and heavy lifting; we use them to transport our vegetables, and to divert material from the waste stream through our composting and recycling practices. Community education is also an important part of our work. We have taught workshops on seed starting, soil remediation, and urban homesteading. We host many visitors throughout the season, from tours of NRCS trainees, to kindergartners, to our neighbors and their children.

Captain Rich Cook has been a full-time commercial fisherman since 1980. Until a few years ago, he never imagined doing anything else. But when low wholesale seafood prices and rising fuel costs made it harder to make a living on the water, he was faced with a tough choice: either give up fishing – or find a way to make fishing pay more. His answer was The Local Catch. The Local Catch is a local seafood processor and wholesaler that markets local seafood to local consumers. The Local Catch strategy supports Rhode Island fishermen, is better for the environment, and provides a fresher, tastier seafood product to our community. When you purchase seafood from The Local Catch, you... * help your local commercial fishermen stay in business * reduce the carbon footprint of the seafood you consume * obtain the highest quality seafood available * enjoy one of the biggest perks of being a New Englander: the world-famous seafood off our shores!
