Aquidneck Farm raises grass fed beef and pastured poultry on 300 acres of conserved land. Most of our cattle is born on the farm, raised on mother’s milk and weaned on lush legume pastures. Our herd is rotationally grazed during the growing season. In the winter they are fed home grown stored forage in the form of dry hay and grass silage. We continue to improve our 75 head herd by selecting for genetics that will thrive in a sustainable, grass based system requiring few inputs other than green grass, fresh water, minerals and sunshine. All of our animals are source verified. We do not feed grain to our cattle. We do not use hormones or add antibiotics to our feed. This is our first year of raising pastured poultry. Our new chicken tractor is home to 60 hens. Currently we sell fresh eggs along with our beef and plan to offer pasture raised broilers by the end of the summer.

Come August, I'll have more heirloom tomatoes then ever before, including a brand new black and green striped cherry tomato that I found at a farmers market in Paris, France being sold for 31 Euros for one kilo!! Yikes. In the fall, I'll have lots of savory root vegetables, squash and leeks.

Baffoni’s Poultry Farm was started in 1935. Today six family members work on their 80 acre farm in Johnston, where they raise 25,000 chickens and 1,200 turkeys. Starting Monday, February 16, 2009, Chez Pascal will be offering The Market Menu in addition to our regular menu on Mondays. Inspired by the fantastic overwhelming success of the Saturday Winter Farmers' Market in Pawtucket, we thought it would be exciting to create menu items based solely on what we can get directly from the Market and/or the farmers themselves. This is not to say that we don't source locally as a rule anyway, but we are bound by supply, seasons and basic products to make sustaining an entire menu based on this notion difficult. The items on The Market Menu will only be offered on Mondays for this reason with a few exceptions sourced elsewhere... salt, pepper, spices, flour, stocks & olive oil. As the season changes and more items become available, the menu will expand. And who knows, with a little luck and ingenuity The Market Menu may evolve into the only menu on Mondays. Now that is progress. Kicking this menu off in Winter certainly provides its own challenges, but we do love a good, fun, healthy challenge! In the long-term, proceeds from sales will sustain the Harvest Kitchen program. From apples, peaches, plums, to nectarines, Hill Orchard’s hundreds of tress produce some amazing fruit. Allan Hill runs this fifty-acre farm, whose lands was the combined property of his parents. The original orchard was planted in the late 1920s and the old trees stand to tell stories of hard New England winters. Today, they have many heirloom apples varieties, offering old favorites and new flavors. Hill Orchard’s fruit can be found at half a dozen farmers markets, schools, and restaurants across the state. Keep your eyes open for apple cider, butter, and vinegar from their own fruit. Hill also helps Rhode Islanders eat local apples all year round by working with Buell Orchard in CT, whose controlled atmosphere (CA) storage keeps farm fresh apples crisp and delicious into spring and summer.

Hopkins Southdowns was established in 1980 by Donald and Debra Hopkins, both of whom had been extremely active participants in the raising of purebred sheep as youth. Donnie and Debbie built their flock based on structural soundness, breed character, natural thickness and adequate size. With this in mind they selected superior genetics from Snow White, University of Connecticut, Deacon Acres, Kenyon Farms, Kwisnek and Cole. Since the foundation was laid, few females have been added to flock, however they have purchased several rams from FR Farms, MB Genetics, Splendorview, and B&B Howard to compliment the ewes they currently have. The farm has been in the Hopkins family for over 100 years. They started raising sheep in 1970, and today five family members live on the farm, and three work with the sheep. Eight of their forty acres are in pasture, on which they keep 40 brood ewes and produce over 50 lambs a year. The ewes are pastured during the summer and participate in rotational grazing, alternating across their four pastures, to keep down the parasites and to help out the grass growth. No hormones are fed. In the warmer months the most popular sheep cuts are chops or ribs, for grilling, whereas in the winter, when stews are more appropriate, shanks are called for. The popularity of lamb as a meat source has climbed recently thanks to exotic, extraterritorial cooking methods. Now, aside from raising their own sheep, Deborah’s full-time job is registering sheep, which she began doing in 1998. She is also the Treasurer of the RI Sheep Co-op and is involved in Rhody Warm blankets. The Hopkins family has been involved in the sheep industry locally and nationally for over 40 years. It has been and continues to be a great experience and lifestyle for all of them.

For many years, Sook Kim and her son, Hyun (Brown '01), have resided in Rhode Island and wanted to start a Korean restaurant. They always thought a city like Providence that prided itself in fine cuisine deserved authentic gourmet Korean food. During their recent trip to the West Coast, the mom and her son found a perfect platform to showcase the family recipes: mobile catering trucks. These modern trucks were versatile and could provide the broad Rhode Island community with access to great Korean food. Hence the idea for "Mama Kim's" was born. Each day, we receive fresh produce and meats from Rhode Island suppliers. Slopeside Syrup is hand crafted in Northern Vermont by four cousins. We start with sugar maple trees in the tranquil forests are Cochran Ski Area, and boil the unadulterated sap into pure Vermont Maple Syrup. This passed straight to you for the sweetest maple flavor you can get. In our second year of operation this year we sugared 17,000 taps on just over 400 acres, up from 5,500 last year. Our sugarhouse is located at the bottom of the small community ski area started by my grandparents which is still in operation today, and our sugarwoods surround the trails, rising from the banks of the Winooski river on a ridge overlooked by Camel's Hump and Mount Mansfield. We boil only our own sap in our sugarhouse. This year has been a difficult sugaring season that has left us with a short crop (less than three thousand gallons of syrup made out of an expected six thousand) but it's some of the best maple syrup you'll ever taste!
